Mostly I dip in tung oil and wipe off. A few coats of that and it's done. I have a great lack of knowledge when it comes to finish. And, I have not had time or money to invest in something else for now.

For large projects I use several coats of Wipe On Poly, For projects small enough to dip, or projects that need a spray I use Varathane.
I honestly don't know if either product fits somewhere in the list of obtions, so I didn't vote.

I either use tung oil or waterborne urethane. I am kinda lazy when it comes to finishing, and these finishes have given me the least amount of grief

Polyurethane (any urethane) is technically a form of varnish...I'll adapt the poll to make that clear.

Being relatively new, I have experimented with several spray cans, but like the look of shellac for a sort of old time finish. But, to hedge a little, after the shellac, I laid on a thin coat of laquer to "harden" the finish.

I voted Lacquer, but I do hand rub a lot of my projects with BOL/Turpentine mixture. If the piece is going to be outside, spray on spar varnish, over BOL thinned with turps.

None of the above
I use Bartley's clear gel varnish.
